Sodium citrate, sodium citrate formula C6H7NaO7 Properties white crystal or crystalline powder particles, flavor base, slightly acidic, no foul. 200 ℃ melting point higher than 310 ℃ decomposition. Slight deliquescence in moist air. Soluble in water, almost insoluble in alcohol. PH 10% aqueous solution of 3.4 to 3.8.
